This Elegant French Lemon Tart Is a Sweet Slice of Sunshine

In a food processor, “pulse” the flour once or twice to aerate it. Roll out the pastry on a lightly floured surface to about 5mm thick, then fold up, transfer to the tin and unroll,. The mixture should resemble fine breadcrumbs.

This will give you a golden crust on the top of the filling. Add the chilled butter through the feed tube, while the machine is running. Place the chilled tart shell onto a baking tray and dock the bottom of the pastry with a fork.
